Blueberry Cheesecake Bites
Make mini cheese cakes in removable spring form pans or cup cake pans with liner. Peel the paper liner off before plating and garnish with blueberry sauce.
Crust: Crushed Graham Crackers with melted butter or a single vanilla wafer for each cheesecake
1 – 8 oz cream cheese, softened at room temperature
2 eggs, medium
1/4 cup sugar
1/2 tsp vanilla
1/3 cup sour cream
1 Tbsp sugar
1.Preheat oven to 350 degrees.
2. Using food processor combine ingredients until smooth.
3. Bake 15 minutes.
3. Whisk topping ingredients together and divide between cheesecakes. Bake for 2 minutes.
4. Cool and refrigerate.
5. Garnish with blueberry sauce.
